[Life: Make] Picnic Essential: Hummus
Hummus is such an easy dish to bring along to a bbq or on a picnic. This is my favorite simple recipe that only involves a food processor, a bowl, and a bit of tinfoil. Takes only a few minutes with basically zero prep and is totally delicious.
5 unpeeled garlic cloves1 tablespoon extra-virgin olive oil1 teaspoon of curry powder (or paprika)1 can garbanzo beans, drained1/2 cup tahini1/3 cup fresh lemon juice1 teaspoon ground cumin1 teaspoon salt1/2 teaspooon of fresh black pepper1 tablespoon extra-virgin olive oil
DIRECTIONS
Preheat oven to 450 degrees.
Place unpeeled garlic cloves on top of a piece of aluminum foil. Drizzle cloves with 1 tablespoon of olive oil; wrap in foil (make sure relatively sealed on the edges). Roast in preheated oven for 10 to 15 minutes until golden brown. Remove from the oven, and allow to cool.
When slightly cooled, squeeze roasted garlic out of peels.
Combine roasted garlic, garbanzo beans, tahini, lemon juice, cumin, salt, pepper, curry (or paprika) and the remaining 1 tablespoon olive oil in the bowl of a food processor. Process until thick and creamy.
Note: I like to bring along olives and add them sliced to the top. (Sometimes I sub hot peppers for olives for a nice added kick). Grab a stack of whole wheat pitas or baked pita chips and you’re good to go!
